  • 2 c. grated raw carrots
  • 3 c. flour
  • 2 c. sugar
  • 1 1/2 c. oil
  • 1 1/2 c. chopped nuts
  • 1/2 c. flaked coconut
  • 1 (15 1/4 oz.) small can crushed pineapple and juice
  • 3 eggs, beaten
  • 2 Tbsp. grated lemon rind
  • 2 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla

Directions

    Mix all dry ingredients.

    Add grated carrots, oil, pineapple, beaten eggs, nuts, coconut and rest.

    Bake in pan 1 hour at 350°.
