  • 2 c. sugar
  • 2 c. flour
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 1/2 c. Wesson oil
  • 4 eggs (unbeaten)
  • 1/2 c. chopped pecans
  • 3 c. raw carrots, grated before measuring

Directions

    Mix together all dry ingredients, then add eggs, beating after each one.

    Add oil, carrots and nuts slowly to mixture.

    Bake 30 to 40 minutes at 350° in 13 x 9 1/2-inch pan
