  • 2 c. sugar
  • 8 1/2 oz. can crushed pineapple
  • 1/2 tsp. salt
  • 2 c. grated carrots
  • 3 eggs
  • 1 tsp. vanilla
  • 1 c. cooking oil
  • 1 Tbsp. cinnamon
  • 1 c. chopped pecans
  • 2 tsp. soda
  • 3 c. flour

    Sift dry ingredients.

    Beat eggs; add sugar and beat well. Add pineapple, carrots, oil and vanilla.

    Add dry ingredients and mix well; add nuts.

    Bake in greased and floured tube pan at 350° about 1 hour or until done.
