Ingredients

  • 2 c. flour
  • 2 c. sugar
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 4 eggs, beaten
  • 1 c. oil
  • 4 c. shredded carrots
  • 8 oz. cream cheese (soft)
  • 1/2 c. margarine (soft)
  • 1/2 tsp. vanilla
  • 3 c. powdered sugar

Directions

    Mix flour, sugar, salt, baking soda and cinnamon.

    Add to eggs mixed well with oil.

    Blend in carrots.

    Bake at 350° for 1 hour in 9 x 13-inch pan.

    Cool.

    Mix frosting ingredients until smooth. Spread over cooled cake.
