  • 2 c. sifted flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 4 eggs
  • 2 c. grated carrots or 1 c. carrots and 1 c. baby food carrots

    Combine

    soda, salt, baking powder and cinnamon and set aside.

    Mix together oil and sugar well!

    Add eggs

    one at a time to oil and sugar mixture.

    Beat well after each.

    Gradually add dry ingredients.

    Add carrots.

    Mix well. Bake at 350° for 50 to 60 minutes.
