  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 1 1/2 tsp. baking soda
  • 3 c. grated carrots
  • 2 1/2 c. flour
  • 3/4 c. raisins (optional)
  • 2 tsp. baking powder
  • 4 eggs
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 c. chopped nuts
  • 1 (8 oz.) can crushed, undrained pineapple

Directions

    Sift flour, soda, salt, baking powder and cinnamon. Set aside. Mix eggs and sugar.

    Add oil.

    Mix in carrots and nuts. Add dry ingredients, blending well.

    Bake at 350° in greased 10 x 14-inch pan until golden brown (50 minutes).
