- 2 c. sugar
- 1 1/2 c. salad oil
- 1 1/2 tsp. baking soda
- 3 c. grated carrots
- 2 1/2 c. flour
- 3/4 c. raisins (optional)
- 2 tsp. baking powder
- 4 eggs
- 2 tsp. cinnamon
- 1 tsp. vanilla
- 1 c. chopped nuts
- 1 (8 oz.) can crushed, undrained pineapple
Directions

1Sift flour, soda, salt, baking powder and cinnamon. Set aside. Mix eggs and sugar.

2Add oil.

3Mix in carrots and nuts. Add dry ingredients, blending well.

4Bake at 350° in greased 10 x 14-inch pan until golden brown (50 minutes).
