- 2 c. flour
- 2 c. sugar
- 1 c. Wesson oil
- 3 c. grated carrots
- 4 eggs
- 1 tsp. salt (optional)
- 2 tsp. soda
- 2 tsp. cinnamon
- 2 tsp. vanilla
- 1 c. pecan pieces
Directions

1Preheat oven to 350°.

2Sift flour, sugar, salt, soda and cinnamon.

3Add other ingredients in large bowl and stir thoroughly.

4Pour mixture into 9 x 13-inch greased and floured (or Pam sprayed) glass Pyrex.

5Can also put into Bundt pan that has been Pam sprayed.

6Bake for 25 to 30 minutes.

7Test by toothpick. Allow cake to cool before icing.
