  • 1 1/2 c. oil
  • 2 c. flour (plain)
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 2 tsp. baking powder
  • 2 c. sugar
  • 4 eggs, well beaten
  • 1 c. chopped nuts
  • 3 c. grated carrots

    Mix oil and sugar; beat well.

    Add eggs and blend.

    Sift dry ingredients two or three times and add nuts and dry ingredients. Blend thoroughly with other mixture; add carrots, a small amount at a time, and blend well.

    Makes 3 layers.

    Cook at 300° to 350° for 30 minutes for layers, 1 hour for loaf or tube pan.
