- 1 1/2 c. oil
- 2 c. flour (plain)
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. soda
- 2 tsp. baking powder
- 2 c. sugar
- 4 eggs, well beaten
- 1 c. chopped nuts
- 3 c. grated carrots
Directions

1Mix oil and sugar; beat well.

2Add eggs and blend.

3Sift dry ingredients two or three times and add nuts and dry ingredients. Blend thoroughly with other mixture; add carrots, a small amount at a time, and blend well.

4Makes 3 layers.

5Cook at 300° to 350° for 30 minutes for layers, 1 hour for loaf or tube pan.
