  • 2 c. sugar
  • 1 1/2 c. oil
  • 2 tsp. soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. flour
  • 3 c. grated carrots
  • 1 c. raisins
  • 1 c. chopped pecans (optional)
  • 1 c. flaked coconut

Directions

    Beat eggs, sugar and oil.

    Sift dry ingredients together. Then add to egg mixture.

    Fold in carrots, nuts, raisins and flakes.
