  • 1 1/4 c. salad oil
  • 2 c. plain flour
  • 3 c. grated carrots
  • 1/2 c. chopped pecans
  • 4 eggs
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 stick butter
  • 2 tsp. vanilla
  • 1 box powdered sugar
  • 1/2 c. chopped pecans

Directions

    Mix the first 9 ingredients and bake at 300° for 1 hour in a 9 x 13-inch pan.

    Mix the next 5 ingredients for the icing.

    Spread on after it has cooled.
