- 1 1/2 salad oil
- 2 c. sugar
- 4 eggs, beaten until fluffy
- 1/2 chopped pecans or walnuts
- 2 (15 oz.) junior size baby food carrots
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
Directions

1Mix oil, sugar, eggs and carrots. Then add flour, baking soda, cinnamon and nutmeg. Pour into well-greased tube pan. Bake in preheated oven at 350° for 1 hour.
