  • 3 c. flour
  • 1 1/2 salad oil
  • 2 c. sugar
  • 4 eggs, beaten until fluffy
  • 1/2 chopped pecans or walnuts
  • 2 (15 oz.) junior size baby food carrots
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg

Directions

    Mix oil, sugar, eggs and carrots. Then add flour, baking soda, cinnamon and nutmeg. Pour into well-greased tube pan. Bake in preheated oven at 350° for 1 hour.
