  • 2 c. sugar
  • 1 c. tasteless vegetable oil
  • 3 c. coarsely-grated carrots
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 c. ground nuts
  • 4 eggs
  • 8 oz. softened cream cheese (optional)
  • 1/2 lb. powdered sugar (optional)
  • 1 tsp. vanilla (optional)

Directions

    Mix first 9 ingredients and beat in the 4 eggs, one at a time. Bake in a greased pan 45 minutes at 350°.
