- 2 lb. carrots
- 1 c. flour
- 1 c. sugar
- 2 eggs or egg substitute
- 1/4 c. cinnamon or more (optional)
Directions

1Cut carrots and place in large pot with about 1-inch of water. Cook until done.

2Mash in water they are cooked in.

3Add flour, sugar, eggs and cinnamon.

4Bake in 10 x 10-inch baking dish for about 30 to 35 minutes or until slightly brown on top.

5Bake at 400°.
