  • 2 1/4 c oil
  • 4 eggs
  • 2 c all purpose flour
  • 3 c grated carrots
  • 2 tsp baking powder
  • 2 tsp soda
  • 2 tsp cinnamon
  • 1 tsp salt

Directions

    Cream sugar and oil, add eggs. Sift flour, soda, baking powder and cinnamon. Add to sugar oil and eggs, fold in carrots. Bake at 350° for 35 minutes.
