  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 4 eggs
  • 1 tsp. salt
  • 2 1/2 c. flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 1/2 Tbsp. cinnamon
  • 1 small can crushed pineapple
  • 1 c. coconut
  • 1 tsp. vanilla
  • 2 1/4 c. grated carrots
  • 1 c. chopped pecans

Directions

    Blend together sugar, oil and eggs.

    Sift salt, flour, baking powder, soda and cinnamon together.

    Add to sugar mixture and beat for 1 minute.

    Add pineapple, coconut, vanilla, carrots and pecans. Pour mixture into lightly floured Bundt pan and bake for 35 to 40 minutes at 350°.
