- 2 c. sugar
- 1 1/2 c. salad oil
- 4 eggs
- 1 tsp. salt
- 2 1/2 c. flour
- 1 tsp. soda
- 1 tsp. baking powder
- 1 1/2 Tbsp. cinnamon
- 1 small can crushed pineapple
- 1 c. coconut
- 1 tsp. vanilla
- 2 1/4 c. grated carrots
- 1 c. chopped pecans
Directions

1Blend together sugar, oil and eggs.

2Sift salt, flour, baking powder, soda and cinnamon together.

3Add to sugar mixture and beat for 1 minute.

4Add pineapple, coconut, vanilla, carrots and pecans. Pour mixture into lightly floured Bundt pan and bake for 35 to 40 minutes at 350°.

5Test by toothpick.
