- 3 c. grated carrots
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 c. sugar
- 1 tsp. ground cinnamon
- 4 eggs, well beaten
- 1 1/4 c. vegetable oil
- 1 tsp. vanilla
Directions

1Combine first 7 ingredients; stir in eggs, vegetable oil and vanilla, mixing well.

2Pour batter into 3 greased and floured (9-inch) round cake pans.

3Bake at 350° for 30 minutes or until toothpick inserted in center comes out clean.

4Cool in pans for 10 minutes; remove from pans and let cool completely on wire racks.
