Ingredients

  • 2 c. sifted flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 2 tsp. ground cinnamon
  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 1 1/2 tsp. baking soda
  • 4 eggs
  • 2 c. grated carrots
  • 1 (8 1/2 oz.) crushed pineapple, drained well
  • 1/2 c. chopped nuts

    Sift flour, baking powder, baking soda, salt and cinnamon together.

    Add sugar, salad oil and eggs.

    Mix well.

    Add carrots, pineapple and nuts.

    Blend thoroughly.

    Pour in 13 x 9-inch pan that has been greased and floured.

    Bake in 350° oven for 35 to 40 minutes or longer.
