Ingredients

  • 3 c. flour
  • 1 1/3 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 tsp. nutmeg
  • dash of cloves
  • 1 tsp. salt
  • 2/3 c. oil
  • 3 eggs
  • 3 2/3 c. shredded carrots
  • 2 tsp. vanilla
  • 2/3 c. water
  • 1 c. nuts (optional)

Directions

    Sift all dry ingredients with spices.

    Add oil, eggs, carrots, vanilla and water.

    Mix until moistened.

    Blend on medium speed for 2 to 3 minutes.

    Stir in nuts, if desired.

    Pour into lightly oiled and floured Bundt pan or 13 x 9-inch pan.

    Cook for 60 minutes at 350° for Bundt pan.
