- 1 1/2 c. Wesson oil
- 2 c. sugar
- 3 eggs
- 2 c. grated carrots
- 1 c. crushed pineapple
- 2 1/2 c. flour
- 1 tsp. soda
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1/2 c. chopped nuts
- 1 tsp. cinnamon
Directions

1Cream oil, sugar and eggs well.

2Add carrots and pineapple. Mix well.

3Sift flour, soda, salt and cinnamon together and add to cream mixture.

4Add vanilla and beat thoroughly.

5Add nuts.

6Pour into 9 x 13-inch cake pan and bake in 350° oven for about 30 minutes or less.

7The secret of the moistness is not to overcook.
