- 2 c. flour
- 2 tsp. baking powder
- 2 tsp. cinnamon (heaping)
- 2 tsp. baking soda
- 1 tsp. salt
- 2 c. sugar
- 1 1/2 c. canola oil
- 3 c. grated carrots
- 4 eggs
- 1/2 c. nuts, pecans or walnuts (optional)
Directions

1Mix all dry ingredients thoroughly.

2Mix in remaining ingredients, adding grated carrots gradually, while mixing at medium speed.

3Pour batter into 3 floured 8-inch cake pans.

4Bake at 350° for 30 - 35 minutes - do not overbake.
