  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon (heaping)
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 c. sugar
  • 1 1/2 c. canola oil
  • 3 c. grated carrots
  • 4 eggs
  • 1/2 c. nuts, pecans or walnuts (optional)

Directions

    Mix all dry ingredients thoroughly.

    Mix in remaining ingredients, adding grated carrots gradually, while mixing at medium speed.

    Pour batter into 3 floured 8-inch cake pans.

    Bake at 350° for 30 - 35 minutes - do not overbake.
