  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 3 eggs
  • 2 c. shredded carrots
  • 1 c. (No. 1 can) crushed pineapple (with liquid)
  • 3 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 2 tsp. soda
  • 1 c. pecans or walnuts

    Mix oil and sugar.

    Add eggs, one at a time, and beat well. Add carrots and pineapple. Sift the dry ingredients and add to mixture.

    Include nut meats.

    Do not overbeat.

    Bake in well-greased angel food pan at 350° for 1 hour and 10 minutes.
