- 2 c. sugar
- 1 1/2 c. salad oil
- 3 eggs
- 2 c. shredded carrots
- 1 c. (No. 1 can) crushed pineapple (with liquid)
- 3 c. flour
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 2 tsp. soda
- 1 c. pecans or walnuts
Directions

1Mix oil and sugar.

2Add eggs, one at a time, and beat well. Add carrots and pineapple. Sift the dry ingredients and add to mixture.

3Include nut meats.

4Do not overbeat.

5Bake in well-greased angel food pan at 350° for 1 hour and 10 minutes.
