- 1 1/2 c. cooking oil
- 2 c. sugar
- 4 eggs, well beaten
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. soda
- 2 tsp. baking powder
- 1 c. pecans
- 3 c. carrots
Directions

1Mix oil and sugar; beat well.

2Add eggs.

3Sift flour, cinnamon, soda and baking powder together 2 to 3 times.

4Add nuts. Add flour mixture to sugar mixture.

5Add carrots, a small amount at a time.

6Bake for 30 minutes in layers at 350°.
