Ingredients

  • 1 c. sugar
  • 1/2 c. cooking oil
  • 1 1/2 c. sifted flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 c. well packed, raw, grated carrot
  • 2 eggs
  • 1/2 c. chopped nuts
  • 1/2 c. cherries, cut up or chopped

Directions

    Mix sugar and oil; add sifted dry ingredients and carrots. Add eggs, one at a time, beating well after each.

    Add nuts and cherries and mix well.

    Bake in oiled loaf pan at 350° for 55 to 60 minutes.

    Cover cake with aluminum foil for first 20 minutes. Remove foil and continue baking.
