- 1 c. sugar
- 1/2 c. cooking oil
- 1 1/2 c. sifted flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1 c. well packed, raw, grated carrot
- 2 eggs
- 1/2 c. chopped nuts
- 1/2 c. cherries, cut up or chopped
Directions

1Mix sugar and oil; add sifted dry ingredients and carrots. Add eggs, one at a time, beating well after each.

2Add nuts and cherries and mix well.

3Bake in oiled loaf pan at 350° for 55 to 60 minutes.

4Cover cake with aluminum foil for first 20 minutes. Remove foil and continue baking.
