- 2 c. flour
- 2 c. granulated white sugar
- 2 tsp. soda
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/2 c. cooking oil
- 4 eggs
- 3 c. grated carrots
- 1/2 c. nutmeats
- raisins (if desired)
Directions

1Sift together dry ingredients (first 6 in list).

2Separately beat sugar into oil (room temperature) on high speed.

3When the mixture is fluffy, add eggs at room temperature, one at a time. Gradually add dry ingredients to liquid.

4Bake in a 10 x 15-inch pan for 35 to 40 minutes at 350° or use 9 x 13-inch or an 8-inch square pan.

5A Bundt pan would require more time.

6Test the cake for doneness by inserting toothpick to see if dough is cohering, or lightly touch the top to see whether it springs back.
