  • 4 eggs
  • 1 1/2 c. vegetable oil
  • 2 c. flour
  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 3 tsp. cinnamon
  • 1 tsp. salt
  • 3 packed c. grated, raw carrots
  • 1/2 c. pecans, chopped

Directions

    Beat eggs and oil.

    Mix dry ingredients.

    Add to egg mixture and beat.

    Add carrots and nuts to mix. Pour into a 13 x 9-inch pan (greased) or 3 (9-inch) greased layer pans.

    Bake 25 minutes at 350° if using layer pans, or 35 to 40 minutes if using 9 x 13-inch pan.
