- 4 eggs
- 1 1/2 c. vegetable oil
- 2 c. flour
- 2 c. sugar
- 2 tsp. baking powder
- 2 tsp. baking soda
- 3 tsp. cinnamon
- 1 tsp. salt
- 3 packed c. grated, raw carrots
- 1/2 c. pecans, chopped
Directions

1Beat eggs and oil.

2Mix dry ingredients.

3Add to egg mixture and beat.

4Add carrots and nuts to mix. Pour into a 13 x 9-inch pan (greased) or 3 (9-inch) greased layer pans.

5Bake 25 minutes at 350° if using layer pans, or 35 to 40 minutes if using 9 x 13-inch pan.
