  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 2/3 cup Oil
  • 1 cup Sugar
  • 2 Eggs
  • 1 1/2 cups Carrots, grated
  • 1/2 cup each Walnuts and Raisins (optional)
  • Cream Cheese Frosting
  • 8 ounces Cream Cheese
  • 1 1/2 cups Confectioner's Sugar
  • 2 teaspoons Vanilla
  • Milk
  • Combine Cream Cheese, Sugar and Vanilla with electric mixer. Add enough milk to thin to a spreadable consistency.

    3. Stir in Flour, Baking Powder, Baking Soda, Cinnamon and Salt.

    5. Bake @ 350 for 30 minutes.
