- 2 cups flour, all-purpose
- 2 cups sugar
- 1 tablespoon cinnamon
- 2 teaspoons baking soda
- 23 cups vegetable oil
- 2 cups carrots grated
- 4 large eggs
- 1 cup nuts chopped
- 1 small cream cheese
- 1/4 cup margarine
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
Directions

1Mix all ingredients in order; beat well.

2Pour into 2 9x5x2 inch loaf pans.

3Bake at 350F (180C) one hour, or until done.

4Cool.

5Frost with the following frosting, if desired.

6Frosting: Mix all ingredients well.

7Spread frosting over cooled cake.
