  • 2 Tbsp. butter
  • 2 c. mashed cooked carrots
  • 3 beaten eggs
  • 2 c. grated cheese
  • 1 small onion, grated
  • salt and pepper to taste

Directions

    Add butter, eggs, cheese, onion, salt and pepper to mashed carrots and mix well.

    Pour into greased 1 1/2-quart casserole. Bake at 325° for 40 minutes.
