- 4 c. sliced carrots
- 1 medium onion, chopped
- 3 Tbsp. margarine
- 2 celery stalks
- 1 can cream of mushroom soup
- 1/8 tsp. pepper
- 1/2 tsp. salt
- 1/2 c. grated Cheddar cheese
- 2 c. herb stuffing
- 1/3 c. melted margarine
Directions

1Cook carrots; drain and cool.

2Saute onion and celery in butter.

3Add soup, salt, pepper and cheese.

4Add carrots, stir until covered.

5Pour into casserole dish.

6Cover with stuffing mixture mixed with melted butter.

7Bake at 350° for 20 minutes.
