  • 1 1/2 lb. carrots
  • 1/4 tsp. salt
  • 2 sticks margarine
  • 3 eggs
  • 1/4 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1 1/2 c. sugar
  • 1/2 c. plain flour

Directions

    Cook carrots until done; drain. Place all ingredients in blender or food processor and incorporate all together. Spray 9 x 13-inch baking dish and bake casserole until set and lightly brown at 350° (approximately 45 minutes). Sprinkle with sugar.
