Carrot Casserole

  • 1 small onion, minced
  • 1/4 c. all-purpose flour
  • 1/4 tsp. seasoned pepper
  • 4 c. sliced, scraped carrots, cooked and drained
  • 6 slices American cheese
  • 2 c. buttered fresh bread crumbs
  • 1/4 c. melted butter
  • 1 tsp. seasoned salt
  • 2 c. milk

    Saute the onion in butter.

    Stir in flour, seasoned salt and seasoned pepper. Gradually add the milk, stirring constantly. Arrange a layer of carrots in a 2-quart casserole.

    Place 3 slices of cheese over the carrots.

    Repeat layers.

    Pour the sauce over the carrots and top with bread crumbs.

    Bake at 350°, uncovered, for 25 to 30 minutes.
