  • 2/3 c. salad oil
  • 1 c. sugar
  • 2 whole eggs
  • 1 c. self-rising cornmeal
  • 1/2 c. sifted self-rising flour
  • 1 tsp. cinnamon
  • 1 1/2 c. carrots, finely grated
  • 3/4 c. raisins
  • 1/2 c. pecans, chopped

    Cream oil and sugar.

    Add eggs.

    Sift together flour and cornmeal; add to creamed mixture.

    Add carrots, nuts and raisins; mix thoroughly.

    Pour into a well-greased loaf pan.

    Bake in a 350° oven for about 45 to 50 minutes.
