- 2/3 c. salad oil
- 1 c. sugar
- 2 whole eggs
- 1 c. self-rising cornmeal
- 1/2 c. sifted self-rising flour
- 1 tsp. cinnamon
- 1 1/2 c. carrots, finely grated
- 3/4 c. raisins
- 1/2 c. pecans, chopped
Directions

1Cream oil and sugar.

2Add eggs.

3Sift together flour and cornmeal; add to creamed mixture.

4Add carrots, nuts and raisins; mix thoroughly.

5Pour into a well-greased loaf pan.

6Bake in a 350° oven for about 45 to 50 minutes.
