- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon salt
- 3 large eggs
- 1 1/2 cups sugar
- 1 1/4 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 2 1/2 cups grated carrots (6 to 8 medium carrots)
