- 1/2 c. sugar
- 2/3 c. milk
- 1 tsp. cornstarch
- 1/2 c. cooked carrots, mashed
- 1 unbaked 9-inch pie shell
- 2 eggs, beaten
- 1 Tbsp. lemon juice
- 1/4 tsp. cinnamon
- 1 Tbsp. vanilla
Directions

1Combine sugar and cornstarch.

2Add eggs, milk carrots, lemon juice and vanilla.

3Mix well; pour into pie shell.

4Sprinkle with cinnamon.

5Bake at 375° for 45 minutes or until custard is set. Serve warm or cold.
