  • 1/2 c. sugar
  • 2/3 c. milk
  • 1 tsp. cornstarch
  • 1/2 c. cooked carrots, mashed
  • 1 unbaked 9-inch pie shell
  • 2 eggs, beaten
  • 1 Tbsp. lemon juice
  • 1/4 tsp. cinnamon
  • 1 Tbsp. vanilla

Directions

    Combine sugar and cornstarch.

    Add eggs, milk carrots, lemon juice and vanilla.
