  • 3 cups carrots peeled and chopped
  • 2 eggs beaten
  • 5/8 cup evaporated milk
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon cumin powder
  • salt
  • ground black pepper freshly
  • oil for greasing the pans

    Preheat the oven to 170 degrees Celsius.

    Generously oil flan molds or individual ramekins.

    Boil the carrots in salted water until soft.

    Drain and mash the carrots.

    In a bowl mix together the carrots, eggs, evaporated milk, curry, cumin, salt, and black pepper.

    Fill the ramekins with the batter and bake in a water bath 20 to 30 minutes until firm. They will rise a bit and then fall.
