Carrot Hummus

Ingredients

  • 2 large carrots, thinly sliced
  • 2 cloves garlic, peeled
  • 2 tbsp vegetable or olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Pinch None red pepper flakes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tbsp tahini paste
  • 1 tbsp lemon juice
  • None None Pita bread, to serve

Directions

    Preheat the oven to 350°F. Line a large baking pan with foil.

    Toss carrots, garlic, 1 tbsp of the oil, cumin, coriander and red pepper flakes in a large bowl. Spread mixture on prepared pan.

    Roast for 20-25 mins or until carrot is golden brown and tender. Let stand 20 mins to cool. Process carrot mixture, chickpeas, tahini, lemon juice, remaining 1 tbsp oil and 2 tbsp hot water until well blended. Season with salt and pepper. Serve with pita bread.
