  • 1 qt. grated raw carrots
  • 2/3 c. lemon juice
  • 1/3 c. grated lemon peel
  • 3 c. sugar
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1/2 tsp. cinnamon

Directions

    Combine all ingredients in a large saucepot.

    Bring slowly to a boil.

    Reduce heat; simmer, stirring constantly until thick. Pour hot into jars, leaving 1/4 inch headspace.

    Adjust caps. Process 10 minutes in boiling water bath.
