Carrot Layer Cake

- 4 eggs
- 1 c. vegetable oil
- 1 1/2 c. honey
- 3 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 3 c. chopped pecans
Directions

1Beat eggs and oil together until well blended.

2Add honey in a fine stream, beating constantly.

3Sift dry ingredients together. Add to batter in 2 additions, beating well after each addition. Fold in carrots and add pecans.

4Pour into 2 greased and floured layer pans.

5Bake at 325° for 45 to 50 minutes, until cake tests done with toothpick.

6Cool on wire racks, then frost.
