- 30 grams Carrot paste
- 60 grams Cake flour
- 60 grams Unsalted butter
- 60 grams Sugar (light brown sugar)
- 1 Egg (medium)
- 1/2 tsp Baking powder
Directions

1Preparation: Melt the butter in the microwave.

2Grease the madeleine molds with some butter, dust with flour, and let cool.

3In a bowl, beat the egg.

4Add the sugar and whisk until it has thickened.

5Add the carrot paste a little at a time, mixing as you go.

6Sift the flour and baking powder into the bowl and mix together.

7Add the melted butter and mix well.

8Let chill in the refrigerator for about 1 hour.

9Scoop the batter into the molds.

10If you fill them too high, they will rise over the tops, so be careful.

11Heat the oven to 190C (a bit higher if using an electric oven) and bake for 20 minutes (or until a skewer or toothpick inserted comes out clean).
