  • 3 c. cooked carrots, mashed
  • 1 tsp. lemon juice
  • 1/4 tsp. salt
  • 3 egg yolks
  • 1/2 c. sugar (white or brown)
  • 1/2 c. condensed milk
  • 1/2 stick margarine or butter
  • 2 Tbsp. flour
  • 1 1/2 tsp. nutmeg
  • 1 1/2 tsp. cloves
  • 1 1/2 tsp. cinnamon
  • unbaked pie shell

Directions

    Cook carrots with lemon juice and salt in small amount of water until well done.

    Drain and mash.

    Mix with remaining ingredients.

    Pour into pie shell and bake in 350° oven one hour or until firm.
