Tomato Kielbasa Penne

- 2 tablespoons olive oil
- 1 medium onion (diced)
- 2 cloves garlic (diced)
- 1 package of fully cooked Polish kielbasa or 1 package lite turkey kielbasa (sliced)
- 1 (14 ounce) can diced tomatoes
- 1 (14 ounce) can tomato sauce
- 18 ounces penne pasta
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon white vinegar
Directions

1Cook penne pasta as directed in separate pot.

2In a large skillet add olive oil, onion, garlic, and sliced kielbasa over cook over medium heat until onions are tender.

3Stir in diced tomatoes (undrained), tomato sauce, oregano, parsley, vinegar, and cooked pasta.

4Cover and simmer for 15 minutes.

5Serve topped with parmesan cheese, if desired.
