- 1 c. flour
- 1/4 c. applesauce
- 2 eggs
- 1/4 c. chopped pecans
- 1 tsp. cinnamon
- 1/4 c. vegetable oil
- 2 c. finely shredded raw carrots
Directions

1Preheat oven to 375°.

2Grease muffin tins or line with baking cups and set aside.

3Combine flour, sugar and cinnamon in a mixing bowl.

4Mix applesauce, oil and eggs together.

5Add to dry ingredients and stir just until moistened, batter will be lumpy. Do not overmix.

6Fold in carrots and nuts.

7Fill tins and bake for 20 minutes.
