- 1 c. flour
- 1/4 c. brown sugar
- 2 tsp. baking powder
- 2 beaten eggs
- 1 c. finely shredded carrots
- 1/4 c. cooking oil
- 1 Tbsp. lemon juice
Directions

1In mixing bowl, stir together flour, brown sugar, baking powder and 1/2 teaspoon salt.

2Make a well in center.

3Combine eggs, carrots, cooking oil and lemon juice.

4Add all at once to dry ingredients.

5Stir until moistened.

6(Batter should be lumpy.) Fill greased or paper baking cup-lined muffin cups 3/4 full. Bake at 375° about 25 minutes.

7Makes 8 muffins.
