- 1 1/4 c. salad oil
- 2 c. sugar
- 2 c. sifted flour
- 1 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. salt
- 4 eggs
- 3 c. carrots, grated
- 1 c. pecans, finely chopped
Directions

1Combine oil and sugar.

2Mix well.

3Sift together dry ingredients.

4Sift half of dry ingredients into sugar mixture; blend.

5Sift in remaining dry ingredients alternately with eggs, one at a time, mixing well after each addition.

6Add carrots and mix well, then mix in pecans.

7Pour in three 9-inch cake pans. Bake at 325° for 25 to 30 minutes or until done.

8Frost with Coconut Pecan Frosting.
