- 1 medium eggplant
- 1 c. bread crumbs
- 1/2 c. milk
- 3 eggs, beaten
- 1/2 tsp. salt
- 1 stick margarine
- 1 c. cheese, grated
- 1 small onion, chopped fine
Directions

1Peel eggplant; boil until tender.

2Soak bread crumbs in milk. Melt margarine and saute onion and eggplant.

3Cut in cheese while mixture is hot.

4Add rest of ingredients, mixing well.

5Pour into buttered casserole.

6Bake 20 minutes at 400°.

7Add additional grated cheese over top.

8Bake 15 minutes.
