  • 1 1/2 c. mashed carrots
  • 1 stick butter
  • 2 Tbsp. flour
  • 1 c. sugar
  • 1 c. evaporated milk
  • 3 eggs
  • nutmeg
  • vanilla flavoring

Directions

    Put mashed carrots in bowl; add butter, flour, sugar, eggs and milk.

    Mix well.

    Pour in an unbaked pie crust and bake in a 400° oven until nicely browned.

    Use meringue topping, if desired.
