  • 1/2 c. sugar
  • 1 Tbsp. cornstarch
  • 1 1/2 c. cooked, mashed carrots (about 1 1/2 lb.)
  • 1 tsp. pumpkin pie spice
  • 2/3 c. evaporated milk
  • 1 unbaked 9-inch pastry shell

    Combine first 6 ingredients in container of electric blender. Process on high speed until smooth.
