Carrot Pineapple Bread

  • 4 c. flour
  • 4 c. sugar
  • 2 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 6 eggs
  • 2 c. carrots, shredded
  • 2 c. crushed pineapple, drained
  • 1/4 tsp. baking powder
  • 4 tsp. vanilla
  • 2 c. Mazola oil (corn oil)

Directions

    Beat eggs, then add oil, sugar, vanilla, cinnamon, baking soda, baking powder and flour.

    Mix well, then stir in carrots and pineapple.

    Spray pans with Pam.

    Fill bread pans 3/4 and bake at 325° for 1 hour.

    Breads will be very moist when done.
