Carrot-Pineapple Cake

- 1 1/2 c. flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2/3 c. salad oil
- 2 large eggs
- 1 c. finely shredded carrot
- 1/2 c. crushed pineapple with syrup
- 1 tsp. vanilla
Directions

1Sift together flour, sugar, baking powder, baking soda, cinnamon and salt.

2Add the remaining ingredients; mix until moistened.

3Beat for 2 minutes at medium speed on electric mixer. Bake in greased and lightly floured 9 x 9 x 2-inch pan in a 350° oven for about 35 minutes, or until done.

4Cool 10 minutes.

5Remove from pan, if desired, and cool completely.

6May be served with or without frosting.

7If frosting is desired, use Cream Cheese Frosting.
