- 1 1/2 c. sifted all-purpose flour
- 1 c. granulated sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 2/3 c. vegetable oil
- 2 eggs
- 1 c. finely shredded carrots
- 1/2 c. crushed pineapple with syrup
- 1 tsp. vanilla
Directions

1Sift together in large mixing bowl the flour, sugar, baking powder, baking soda, cinnamon and salt.

2Add the oil, eggs, carrots, crushed pineapple and vanilla; mix until moistened.

3Beat with electric mixer at medium speed for 2 minutes.

4Bake in a greased and lightly floured 9 x 9 x 2-inch pan at 350° for 35 minutes.

5Cool 10 minutes.

6Remove from pan and cool completely. Frost with Cream Cheese Frosting.
